Blackberry Cobbler for Two
I found these cute little tart dishes at the Ross store nearest to my house, and they were only $2.00 each! So I had to buy the only 2 they had 🙂 I couldn’t wait to make something yummy and cute, too so I made a little blackberry cobbler for two. I have lots of blackberries in my freezer from last Summer’s crop from a friend’s house, so all this took was defrosting the berries in sugar, cornstarch, and a pinch of nutmeg, then using a store-bought crust that I had sitting in my fridge. If you don’t have a cute little tart dish to make this recipe with, be creative and use something like leftover mini foil pie pans, mini loaf pans, oven-safe mugs, or whatever suits you. For a bigger crowd, double or triple the recipe and use a casserole dish. I love that this little cobbler reminds me of Summer. It will be here before we know it. Enjoy making this sweet tart dessert.
Sunday Spotlight Recipes and Blackberry Cobbler
2 pints of blackberries
1/3 cup of sugar
1 1/2 T. of cornstarch
a pinch of nutmeg
1 ready-made pie crust (homemade or store-bought)
Directions:
Step 1: If using frozen blackberries, take out 2 pints and let thaw with sugar, cornstarch, and nutmeg.
Step 2: When blackberries are thawed almost completely, stir well and pour berries into a tart dish.
Step 3: Unroll prepared pie crust and cut to fit with a sharp knife or pizza cutter. Lay the dough on top of the berries and tuck any dough that hangs over the sides. With a sharp knife, cut slits in dough so steam can escape.
Step 4: Bake cobbler with a cookie sheet underneath it to catch any dripping juice at 400 degrees for 30 minutes, and brown.

























This is such a beautiful and simple dessert! I would love to try it real soon. What a bargain you had on the baking dishes! 🙂 I better go do some serious shopping now. I always wanted a baking dish like this one!
