Microwave Peanut Butter Cup Fudge

I love peanut butter fudge and I love chocolate peanut butter cups too, together in this fudge it’s seriously addicting to me. It taste really good but the best thing about this yummy fudge is how easy it is to make. When I think of making fudge I think of standing over the stove stirring a yummy mixture of butter, sugar and chocolate or in this case peanut butter until it gets to the perfect temperature after about 20 minutes. Well, this fudge takes about 5 minutes total to make and put into the refrigerator, it’s the easiest fudge I’ve ever made.  I used crunchy peanut butter in this fudge because that is my families favorite peanut butter, the added crunch was great but if you like creamy peanut butter then use that.

The texture of this fudge is not exactly the same as the traditional fudge, it’s a little more dry or less creamy than the regular method, but it does taste wonderful. I think I’m going to have to put this recipe at the top of my candy making recipes for Christmas gifts.

Microwave Peanut Butter Cup Fudge

Ingredients:
1 cup butter
1 1/4 cup crunchy peanut butter
1 teaspoon vanilla
3 1/2 cup powdered sugar
8 oz. package mini Reese’s Peanut Butter Cups
1/2 cup bittersweet or semisweet chocolate chips
1 tablespoon crunchy peanut butter
large salt crystals for garnish (optional)

Directions:
Step 1: Line a 8 X 8 inch pan with parchment paper or foil. Put the butter and peanut butter into a microwave safe bowl and microwave for 2 minutes, then stir well.
Step 2: Put back into microwave for another minute then whisk well until completely combined stir in the vanilla.
Step 3: Stir in the powdered sugar with a wooden spoon until it’s combined and no longer shiny.
Step 4: Put half the fudge into the pan and press down then spread the mini peanut butter cups over the top. Next put the remainder of the peanut butter fudge on top and press down evenly. Cover with foil and put into the refrigerator to cool.
Step 5: When the fudge is completely cool melt the chocolate chips and tablespoon of peanut butter in microwave safe bowl stirring every 30 seconds until melted completely. Pour the melted chocolate over the top of the fudge and spread evenly with the back of a spoon. Cool in the refrigerator until completely cool.
Step 6: Cut the fudge into small square and enjoy!

Yum! Peanut butter and chocolate is a winner! I just made a version of pb cup fudge yesterday that is way different than this. Now I want to make this one too!

I just finished the last peanut butter cup this evening and was feeling sad about it. My husband looked at me as I took the last 1/2 that he had just eaten from as if to say, “how dare you.” Maybe I should make these now – I’m sure they’d be gone in a heartbeat.
