Loaded Mashed Red Potatoes

Do you like mashed potatoes? Then your going to love these potatoes loaded with all the yummy stuff that make potatoes so sinful. Red potatoes are my favorite type of potato but you can use the brown baking potato or Yukon gold which ever is your favorite. I leave some of the skin on for a more rustic dish and I don’t mash all the lumps out so you really can’t mess these potatoes up. I used light sour cream and skim milk because that is what I usually have on hand so these aren’t totally sinful 🙂 These potatoes go perfectly with my grilled chicken with balsamic-pom reduction sauce, but what man wouldn’t love these potatoes with a juicy grilled steak. I’m with you. I love keeping the skin on and using red or yukon gold. Now I even use sweet potatoes. You can’t beat a mashed potato on the side of any dish if you ask me. 🙂

Wow, get sick for a week or two…and you miss so much! I make something like this- in fact, whenever I make any kind of mashed or smashed potato, I’m always looking for ways to add to it, or make it less healthy, rather lol Like Brandy,I would eat the whole thing…easily!
