Lemon is such a favorite of mine. My grandma used to make us kids each a pie when we came to visit and I always chose lemon meringue and my sister chose chocolate. She made the best pies and it really made us feel special to have our very own. These little lemon squares remind just how good that pie was.
Lemon Squares
Crust:
2 cups flour
1/2 cup powered sugar
1 cup butter chilled cut into chunks
Step 1: Mix these ingredients in a bowl with mixer until it forms a ball. Press dough into a light greased 15 X 10 in. bar pan and bake at 350 degrees for 14 min.
Cream cheese filling:
1 8 oz. cream cheese softened
2 eggs
1/2 cup powdered sugar
1 tsp. vanilla
Step 2: Mix these together until creamy and pour on top of partially baked crust. Bake at 350 for 6-7 min.
Lemon filling:
2 cups of sugar
1/4 cup flour
4 eggs
1/4 cup lemon juice
1 T. grated lemon peel
Step 3: Mix all ingredients together except lemon juice until it’s well blended. Slowly add lemon juice and lemon peel until mixed well.
Step 4: Pour over crust and bake for 14 min.
Step 5: Cool then sprinkle with powdered sugar and cut into squares and serve.
