Lemon Curd thumbprint Cookies

These cookies are little bites of sunshine.  The taste reminds me of lemon bars with the intense lemon flavor, and I just happen to love lemon bars so does the rest of my family.  The cookies are basically a short bread cookie rolled into a ball then pressed  in the middle and filled with something lip licking good like my homemade lemon curd. I suppose you can fill your thumb-print cookies with your favorite jelly or jam or even store bought lemon curd, but if your up for it make the lemon curd you won’t regret it.  Happy Baking 🙂

Lemon Curd thumbprint Cookies

Ingredients:
1 cup softened butter
1/2 cup domino granulated sugar
1/4 tsp. salt
2 egg yolks
1 tsp. vanilla
2 1/2 to 3 cups flour
extra sugar for rolling
lemon curd or jam

Directions:
Step 1: Cream butter, sugar and salt in large bowl.
Step 2: Beat egg yolks and vanilla into creamed mixture until light and fluffy.
Step 3: Gradually stir flour into creamed mixture. Refrigerate until chilled, 1 to 2 hours.
Step 4: Preheat oven to 375°F. Roll chilled dough into 3/4-inch balls. If desired, roll each ball in sugar. Place about 1 inch apart on ungreased cookie sheets. Make indentation for jam or jelly by pressing thumb gently into center of ball.
Step 5: Bake at 375°F for 16 to 18 minutes or until lightly browned. Remove from cookie sheets to cooling rack. Store in airtight container. Before serving, fill indentations with lemon curd or jelly of your liking.
Makes 2 1/2 dozen

These look and sound amazing. But I'm confused because the step by step ingredients call for egg yolks but I don't see them in the ingredients list. I'm guessing that maybe I should add a couple of egg yolks, but it would be great to know what you did!

sorry about that it's now been added to the ingredients, so yes use the egg yolks and thanks for the catch.

Hi I tried to make your cookies and they turned out very crumbly. I looked at some other recipes and most have the same amounts as yours except a cup less sugar. I’m just wondering if it was a typo or if I did something wrong? Please advise.

oops sorry I meant less flour, and I didn’t bake them because I couldn’t get the dough to meld.

Sorry to hear that your cookies didn’t want to mold together 🙁 . The recipe I used was from domino sugar and there wasn’t a type-o here is the link http://www.dominosugar.com/recipe/thumbprint-jewel-cookies-651 I do think the cookies are a dryer cookie than most. Here is another link to another thumbprint cookie they have with less flour http://www.dominosugar.com/recipe/berry-shortbread-dreams-8367 try that one out, I’m sure you won’t have the same problem.

I will make a note on the recipe to try using less flour so it doesn’t happen to anyone else. I know it’s a bummer when you have your heart set on making something and it doesn’t work out.

We all measure flour a little different and sometimes if you do the scoop method it compacts the flour and you end up with more in the cup which X 3 could have accounted for the problem. Also if your butter isn’t room temperature or soft enough it makes a difference in getting a cookie like this to stick together.

Thanks for letting me know the problem I like to hear how things work out, hope you try out the another thumbprint cookie and put the lemon curd in the middle because it really is yummy.
