Cauliflower Tabouli-Guest Recipe

This recipe comes to you from a friend of mine from high school.   She is a vegetarian now and is always cooking something up and talking about it on Facebook, so I asked her to send me something for You Made That?, and she did.  Cauliflower is the star of this healthy salad with lots of flavor from parsley, mint and lemon juice.  It would be the perfect picnic salad or for a BBQ because it doesn’t have to stay cold.[/donotorprint]

Cauliflower Tabouli-Guest Recipe

Ingredients:

1 head of cauliflower grated with box grater
2 plum tomatoes chopped or small basket of cherry tomatoes
1 lemon juiced about 1/3 c.
2 scallions chopped
1 bunch of flat leaf parsley chopped
2 T. mint chopped
3 T. olive oil
2 T. soy sauce

Directions:
In a large bowl toss all together and season with salt and pepper.
