Juicy tangelos star in this easy throw together salad. When your to busy to cook and want something tasty, stop at the grocery store on your way home for few fresh ingredients. Cooked rotisserie chicken with some greens, fruit, veggies, nuts, dressing and you have yourself a low fat healthy meal. Don’t buy your dressing just make a quick citrus vinaigrette to go with, it’s so simple here’s how.
Fresh Citrus Salad
1/4 cup orange juice or other citrus like grapefruit
1 T. mayonnaise
1/8 to 1/4 cup of canola oil
1 clove garlic pressed
1 T. citrus flavored vinegar or your balsamic
salt and pepper to taste
1 T. of chopped flat leaf parsley
Step 1: In small mixing bowl whisk juice into the mayonnaise slowly, then add garlic, vinegar, salt and pepper, parsley slowly add oil until it becomes like dressing. Makes about 1/2 cup.
