Waffles are a staple in our home, we really like chocolate waffles but these banana nut waffles are pretty dang good. I used flax meal for added protein and fiber and also used pastry wheat flour. I buy my pastry wheat flour at a health food store because they don’t carry it in my local grocery store. There is a difference in whole wheat flour and pastry whole wheat flour, the pastry flour is ground very fine. Pastry flour is great for baking because its not as heavy as regular wheat flour and these waffle have lots of fluff to them and they taste wonderful.
Banana Nut Waffles
1 cup pastry wheat flour
3/4 cup all purpose flour
1/4 cup ground flax meal
1 T. baking powder
1/4 tsp. nutmeg
1/2 tsp. salt
1 1/2 cup milk
2/3 cup of mashed banana
1/4 cup oil
2 eggs separated
bananas for chopping
nuts of your choice
Step 1: In a medium large bowl put dry ingredients in make a well in the middle of flour.
Step 2: In smaller bowl put milk and oil together.
Step 3: Separate egg yolks from whites and put yolks in the well in the flour mixture. Whip eggs whites in a clean bowl until stiff peaks form.
Step 4: With a whisk blend the yolks and part of milk/oil mixture with flour mixture. Add mashed banana and remainder of milk until just blended.
Step 5: Fold in the egg whites until incorporated.
Step 6: Follow directions for your waffle maker and cook waffles.
Step 7: Sprinkle toasted chopped pecan on waffles, add chopped bananas and syrup. If your a peanut butter fan peanut butter goes really well on these waffles. Enjoy these tasty waffles.
